Pineapple Smoothie & Chia

I’ve had that catchy Pen Apple song in my head for DAYS. It doesn’t help that little Miss makes up a variety of different versions throwing anything together to rhyme. So, rather than getting frustrated, I thought I’d embrace it as the theme for this morning’s smoothie bowl.

I kept this really simple but you could add a protein powder of Maca if you felt like it.

Ingredients:

  • 1/2 cup chia seeds
  • drizzle of vanilla essence
  • 1 cup almond milk
  • roughly a cup of chopped fresh pineapple
  • 1 apple, peeled and cored
  • 1 frozen banana
  • 1 cup almond milk
  • bee pollen to top

Method:

The night before: combine chia, vanilla essence and almond milk in a container and stir thoroughly so all seeds are covered. Cover and store in fridge overnight.

The morning: Combine pineapple, apple, banana and almond milk in a blender and blitz until smooth.

Spoon chia mixture into bottom of bowl and top with pineapple smoothie. Sprinkle bee pollen on top.
