We’re staying at a Bach on Great Barrier Island which is a beautiful, remote island near Auckland. There’s no power here – homes use solar and generators so it’s quite restrictive with appliances. No blender! Which means no smoothies.
So I’ve tried to be as creative as I can instead. Last night I soaked Chia seeds in almond milk and acai powder and it was delicious! Here’s the recipe:
- 1 cup Chia seeds
- 2 cups almond milk
- 2 Tablespoons Matakana Acai bowl mix
- Handful of blueberries
- Coconut yoghurt
- Strawberries sliced
- Pomegranate seeds
The night before: mix Chia seeds, almond milk and acai powder in a container until well covered and stirred. Cover and put in fridge.
The morning: layer bowl with Chia first, then blueberries (we used frozen), coconut yoghurt, granola. Top with berries and pomegranate seeds.
